There’s no picture today, as it was so delicious I ate it all before I could take one.

Home Made Pesto
Pesto is a pretty easy, if expensive, sauce that you can add to pasta, pizza, salad, and really almost anything.

2 cups packed Basil, chopped

3/4 cup Pine nuts (lightly roasted)

1 cup Olive Oil (Extra Virgin optional)

1 cup Parmesan Cheese

1 tsp Salt & pepper

1 Clove Galic, finely chopped

Combine ingredients in a food processor in the following order: Garlic, Pine Nuts, Basil, Olive Oil, Parmesan Cheese. Grind on low power until reaching the consistency of course grit. Season to taste, and before serving you may wish to mix in a tsp of lemon juice to bring out the flavour.

The Salad
serves 2-3

1 cup of Pesto from above

2 cups Blooming Broccoli Florets, chopped into chunks

2 cups Beet Greens, chopped coarsely

1 cup Swiss Chard, chopped coarsely

1 cup Kale, chopped finely

Thuroughly mix ingredients in a Salad bowl, and stir in pesto. Fold together until pesto coats veggies. Serve.

Goes great with mashed poatoes, and a lager of your choice.
